Lamb Red Curry
Tender pieces of Australian lamb slow cooked for 8 hours in a spicy chilli sauce with garlic, cumin, coriander, a hint of tomato, fresh capsicum and spinach. Serve with rice or noodles or use as a base to create your own laksa.

Boil in bag
Fill a stock pot (minimum 15lt volume per 2.5kg pouch) with water. Bring water to the boil and place pouches into the water.
If frozen boil for 80 to 90 minutes (or until a core temperature of 72oC is achieved)
If thawed boil for 45 to 55 minutes (or until a core temperature of 72oC is achieved)
Ensure water is sufficient to keep pouches from sitting on the bottom of the pot during heating.
Set steamer to 100oC and 100% humidity
If frozen heat for 80 to 90 minutes (or until a core temperature of 72oC is achieved)
If thawed heat for 45 to 55 minutes (or until a core temperature of 72oC is achieved)
Thaw pouch at or below 5oC
Open pouch and transfer to a suitable wide-base saucepan
Gently heat while stirring until a core temperature of 72oC is achieved
Heated product may be held at or above 65oC for up to 4 hours after heating.
Discard any leftover heated product.
